Buffalo Bills Tailgating Recipes: Mini Meatball Sandwiches

Buffalo Bills fans are renowned for offering one of the best tailgating experiences in the NFL. Certainly, Buffalonians put on quite a show, and they should be – quite rightly – proud of what they offer.

In fact, you could argue that for a lot of Bills fans, the tailgate party is almost as – if not more – important as the game itself. Either way, it’s a fun experience, something which all sports fans should attend, if they ever get the opportunity.

With the return of NFL football, we’ve decided to do our bit, and suggest some recipe ideas. Our latest offering for the Bills home opener against the Indianapolis Colts is Mini Meatball Sandwiches, which comes courtesy of Ree Drummond from ThePioneerWoman.com.

The great thing about this recipe, is that it is very straightforward, and only takes 50 minutes in total to make (25 minutes preparation and 25 minutes cooking). It’s the ideal compliment to the game, regardless of if you’re going to Ralph Wilson Stadium, attending a gathering, or just staying at home. Enjoy!

1) Ingredients:

  • 2 pounds ground chuck or ground beef
  • 1/2 cup panko or other breadcrumbs
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 1/2 medium onion, diced
  • 1 large jar marinara sauce
  • 12 dinner rolls or slider roll
  • 2 cups grated mozzarella

2) Directions:

First of all, you need to mix the meat with the breadcrumbs, milk, garlic, salt and pepper, kneading it all together with your hands. Then, roll the mixture into heaping tablespoon-size rolls.

Now, heat the olive oil in a large skillet over medium heat, i.e. cooler than Percy Harvin’s (alleged) temperament. Add the onions and cook for one minute.

Next, add the meatballs between the onions and brown for a further minute. Depending on the size of your skillet, you may need to do this in two batches.

Follow this by pouring in the jar of marinara and then shaking the skillet gently to mix. Put on a lid and allow to simmer for 20 minutes.

You’re now nearly ready to go, so get your 12 dinner or slider rolls and cut each one in half. Place a handful of grated mozzarella on the top and bottom of each roll.

Finally, spoon a meatball with the sauce onto the bottom bun. Place the top bun on, and you’re ready to serve!
