Buffalo Bills Tailgating Recipe: Charleston Cheese Dip

Buffalo Bills fans are renowned for offering one of the best tailgating experiences in the NFL. Certainly, Buffalonians put on quite a show, and they should be – quite rightly – proud of what they offer.

In fact, you could argue that for a lot of Bills fans, the tailgate party is almost as – if not more – important as the game itself. Either way, it’s a fun experience, something which all sports fans should attend, if they ever get the opportunity.

With the return of NFL football, BuffaLowDown has decided to do our bit, and offer you some recipe ideas to try out. And the great thing is, you can use them whether you’re going to the game, attending a party, or just having a few friends around to you home.

Now, given that this is only week one of the preseason, we’re going to start off with something easy. As such, without further ado, this is how you prepare some Charleston cheese dip:

1) Ingredients:

  • 1/2 cup mayonnaise
  • One 8-ounce package cream cheese, softened
  • 1 cup grated sharp Cheddar cheese
  • 1/2 cup grated Monterey Jack cheese
  • 2 green onions, finely chopped
  • 1 dash cayenne pepper
  • 8 butter crackers, crushed, such as Ritz
  • 8 slices bacon, cooked and crumbled
  • Corn chips, crackers or bagel chips, for serving

2) Directions:

First things first, turn that oven on! Preheat it to 350 degrees F.

Next, you need the mayonnaise, cream cheese, cheddar cheese, monterey jack cheese, green onions and cayenne pepper. Mix them all in together, in a medium bowl.

Now, transfer the mixture to a shallow baking dish – for example, a 9-inch pie pan. Finish off by topping the mixture with the cracker crumbs.

In total, this should take roughly 10 minutes. Now, you can place it in the oven for around 15 minutes, until it is heated through.

Once you have removed the pan from the oven, put bacon on top for the final touch. Your Charleston cheese dip is now ready to serve, whether it’s with corn chips, crackers or whatever you desire!

As long as you follow the instructions above, it should turn out perfectly, giving you around 10 servings. After all, food is one of the last things you want to worry about as you prepare for the Bills opening preseason game against the Carolina Panthers. Enjoy!
