Super Bowl Recipes: Miniature Reubens

With Super Bowl coming up in just a couple of days, I am not only getting ready for the game, even thought the Buffalo Bills are not in it, I will be joining that company that they party brings, as well as the commercials to see what the next best commercial is that we will get to see for the next couple of months, but most importantly, I am looking forward to the foods that are going to be available come Sunday.

Here is an goodie, don’t really know if it is an oldie though.  Either way if you like Reubens, this is a recipe that I would make every so often on Sunday’s as a quick snack to have while the game was on.  These can be done before hand and brought to the party

This is a recipe for Miniature Reubens.

So here we go.

You will need 1 loaf of rye or pumpernickel bread, which ever is your choice and favorite.

You will need 1/2 pound of corned beef. Now I prefer to make my own corned beef and then slice to the thickness for each sandwich.

1 can of sauerkraut, because honestly, you can’t have a Reuben without sauerkraut.

3 slices of Swiss cheese is the final ingredient needed for this old time favorite.  The Swiss will be cut into stripes 1×2 inches.

Now if you choose to make the corned beef yourself, just follow the directions on the package and plan accordingly.

Place a third of a slice of the corned beef on 1/2 of the bread slices.  Top each each some of the sauerkraut and a rectangle of cheese.  Cover with the remaining bread slices.

Add sandwiches as few at a time and grill, until lightly browned and cheese is melted.  Add additional butter as needed when grilling.  Now you can grill or you can place on griddle on stove top.

Serve hot.  You can also reheat these in a 350 degree oven for 5 minutes.  Cut each in half depending on the bread that you started off with.

Yield for this recipe is 15 mini Reuben.

Prep time for this is about 45 minutes, minus the making of corned beef if you choose to make it yourself.
